California wine accounts for more than 90% of all U.S. wine production! The temperate climate, sun, and rich soil make California an ideal place to grow wine grapes. There are nearly 850 operating wineries in California that harvest from approximately 570,000 acres of grapes! In California, the most popular white wine varietal remains the Chardonnay. An extremely versatile grape, the Chardonnay grows in varying conditions, which directly impact its characteristics. The high acidity makes it popular for sparkling wines and takes on flavors of honey, lemon, pear, apple, and butterscotch. You can find excellent California Chardonnays at very reasonable prices.

The most popular red California wine varietal is, without argument, the Cabernet Suavignon. These grapes contain more tannins than in many others, which means Cabernets age longer–between 5-10 years–making it a great collectors wine. The intense and complex flavors usually draw descriptions of blackberry, black currant, oak, cedar, and mint.

Pairing Your California Wine with Food
Taking the two primary examples of popular California wines, there are many excellent food-pairing recommendations for both the Chardonnay and Cabernet Sauvignon. The buttery Chardonnay goes beautifully with seafood and creamy pasta sauces. Cabernet Sauvignons complexity makes it a great accompaniment to robust foods such as grilled meats, steaks, and aged cheeses.
